Certified Organic Mixed Cut Shares

Certified Organic by Oregon Tilth – These shares are butchered into steaks, roasts, ground beef, stew meat, short ribs, soup bones and organ meats. Your take home meat weight after butchering is 70-75% of the hanging weight. A quarter share with a 150 lb. hanging weight fills 3-4 grocery bags.

Non-Organic Mixed Cut Shares

Most years we buy some non-organic yearlings from a neighbor with sustainable and humane practices. These animals are raised organically within our system. These shares are butchered into steaks, roasts, ground beef, stew meat, short ribs, soup bones and organ meats. Your take home meat weight after butchering is 70-75% of the hanging weight. A quarter share with a 150 lb. hanging weight fills 3-4 grocery bags.

Ground Beef Quarters

These shares are all ground beef split into package sizes of your choosing. Your take home weight after butchering is 55-60% of the hanging weight. These shares are limited and we typically sell out fast.

Mixed Cuts – Quarter Orders Only

Mixed cut quarter orders are matched with an identical quarter order to split a half accurately. Note your choice of thickness of steak and size of roasts in the additional information field and we’ll match you up! Steak thickness is generally ¾ inch – 1 inch. Roast sizes are generally 2-3 lbs., 3-4 lbs. or 5-6 lbs.
