Organic vs Non-Organic
All our quarter, half, and whole beef shares eat 100% grass-fed, but our certified organic cattle eat a 100% organic diet their entire lives and never receive antibiotics. We source our non-organic animals from 100% grass-fed operations, which then graze our organic pastures for 4-8 months before harvest..
Processing Fees
All prices include harvest and butchering fees. Beef shares are harvested on farm and cut and wrapped to your specifications at 4 Star Meat Co in Eugene.
Hanging Weight
Our price is based on the hanging weight: the weight of the carcass after harvest, once the butcher removes the head, hide, hooves, and entrails. During butchering, organs and fat are removed and the beef is trimmed and deboned (depending on your butchering order). You receive 70-75% of the hanging weight (55% for ground beef only shares) in cuts of beef. Request organs, fat, trim and bones as desired!
Butcher Dates
We butcher May – November. After you place your order we will email to schedule your butcher date.
Deposit
When we receive your order, we will email to confirm and will then invoice you for a $50 deposit. This deposit reserves your beef share. The remainder will be due two weeks after butchering.
Place Your Butcher Cutting Order
After the initial field harvest your beef share will go to 4 Star Meat Co.’s butcher shop in Eugene. After hanging for 7-10 days, 4 Star butchers your beef to your specifications. Customize your cuts by calling 4 Star or using their ordering form.
Pick Up Your Beef
Eugene and surrounding area customers pick up beef from our butcher, 4 Star Meat Co. at 90362 Prairie Rd, Eugene, Oregon, 97402. Your beef will be ready about two weeks after your butcher date.

- 250-350 lbs hanging weight.
- A half share fills about 6-8 grocery bags.

- Certified Organic: $8.00/lb of HW
- Non-Organic: $7.00/lb of HW
- 100% grass-fed, grazed on certified organic, intensively managed pastures.
- Steaks, roasts, ribs, ground beef, stew meat, soup bones and more.
- 500-700 lbs hanging weight.
- A whole share fills about 12-16 grocery bags.

- 175-225 lbs hanging weight.
- Receive about 55% of hanging weight in ground beef.
