Our beef shares are 100% grass-fed and grazed on certified organic, intensively managed pastures for tastier, healthier, and nutrient dense beef.

• We have chosen on-farm harvest with an ODA inspected mobile butcher rather than transporting to an USDA organic slaughterhouse – organic animals are certified organic as live animals only.

• Price per pound of hanging weight is exact and is how final cost is calculated. All other weights are and prices are estimates/averages.

Organic vs Non-Organic
All of our quarter, half, and whole beef shares eat 100% grass-fed. Our certified organic cattle eat 100% organic their entire lives. We source our non-organic animals from 100% grass-fed operations, which then graze our organic pastures for 4-8 months before harvest.
Processing Fees Included
All beef share prices include harvest and butchering fees.
Hanging Weight
The price of a share is per pound of hanging weight: the weight of the carcass after the on-farm field harvest. After the field harvest, your beef is transported to 4 Star Meat Co. for butchering.
Final Yield After Butchering
Butchering includes de-boning, trimming, fat and organ removal. You receive 70-75% of the hanging weight (55% for ground beef only shares) in cuts of beef. Request organs, fat, trim and bones as desired!
Freezer Space
Quarter: 3-5 cubic feet. Half: 6-10 cubic feet. Whole: 12-20 cubic feet.
Butcher Dates
We butcher May – November. After you place your order we will email to schedule your preferred butcher date. Portland area customers will choose a Portland pick up date.
Deposit and Payment
After confirming your order details, we will invoice you for a $50 deposit. This deposit reserves your beef share. The remainder will be invoiced and emailed after harvest.
Place your Butcher Cutting Order
After the field harvest your beef share will go to 4 Star Meat Co.’s butcher shop in Eugene. After hanging for 7-10 days, 4 Star butchers your beef to your specifications. Once you receive your invoice, tell 4 Star how you want your beef butchered by calling 4 Star or using their ordering form.
Pick Up Your Beef
Eugene area customers pick up beef from our butcher, 4 Star Meat Co. at 90362 Prairie Rd, Eugene, Oregon, 97402. Your beef will be ready about two weeks after your butcher date.
Portland area customers pick up at 1137 SE 20th Ave in the Hinson Baptist Church parking lot. We have pick ups on scheduled Wednesdays from 4:30-6:30 (one Saturday date in November from 12:00-2:00). Delivery fee for quarter, half or whole beef shares to Portland is $50.
Florence/Coast area customers can pick up at 4 Star in Eugene or email to arrange a delivery.
We deliver within an hour of Eugene for a $50 delivery fee.
