2026 CSA Season Week Three
Welcome to Week Three of the 2026 CSA Season! We hope your summer is off to a great start and you’re enjoying the delicious produce in your CSA boxes! Everything we grow here at the farm is organic and biodynamic, and when we include fruits from other farms (blueberries, apples, pears) those are organic as well. We’re thrilled to have you with us, sharing the amazing bounty throughout the season. We look forward to hearing how you’re enjoying your CSA shares!
Half Share – Group A members, this is your week!

Have you joined our CSA yet?
We do still have shares available for this season, and it’s not too late to join! We encourage you to sign up now. Every share helps to support the farm and keep the CSA going. We appreciate all of your support!
We will still have full shares and half shares on the same schedule format as last year, so half shares will have a Group A and a Group B schedule on alternating weeks. Our 20-week season will again go from June to October, and prices for all our delivery options remain the same as the 2025 season.
We will have deliveries to Eugene, Springfield, Portland, Florence, Mapleton, Veneta, and Noti. As of now, all the delivery sites remain the same except the High Street location in Eugene. Our new site for that area will be on E 36th, at the home of one of our members, Karena Norton.
This is already the third week of the CSA season- Sign up today so you can enjoy the amazing Winter Green bounty this season!
You can place your order for the 2026 CSA Season here.

You’ve been asking….Yes, we are back in Eugene on Wednesdays!
Our Eugene Farm Stand is located at the Emmaus Lutheran Church (in the parking lot right on W. 18th Ave). The market will be open from 2pm to 6pm. We look forward to seeing you there!

Are you going on vacation?
With summer activities in full swing and all of us getting busy, it’s easy to forget things sometimes. We totally get it! If you’re going on vacation, just let us know! We’re happy to help make things easier if we can.
We do our best to plan ahead as much as possible to avoid any last-minute mistakes, so if you need to change a pickup date or a site, please let us know at least 7 days in advance.
If you do have to miss a scheduled box, we have a few options:
- Reschedule for another week – for half share members, it’s easiest to reschedule for a week you wouldn’t normally pick up. For full share members, you can choose a week you will be available to take a double share.
- Receive up to two vacation coupons that can be redeemed at any of our markets.
- Donate your share to Food for Lane County.
- Have a friend pick up your share while you’re gone – we actually don’t need to know about this one! As long as whoever is picking up your box checks off your name, treats the site and other members respectfully, and leaves the tote (just like you would!), you’re good to go!
We are happy to oblige with all of these options, just please make sure to let us know as soon as possible. Thank you so much!

What’s happening on the farm?
We have an abundance of bird activity out on the farm this week. The Swallows are very vibrant and active. The Kildeer are nesting and hatching babies and the owls are also having babies now too. We’re really enjoying the cheerful sound of the happy birds!
Shannon has been very busy seeding so many winter crops (Collards and Kale, for example). Our harvest crew is “all hands on deck” transplanting and harvesting many wonderful veggies that will be heading your way soon!

What’s in your box this week:
- Beets
- Peas
- Kale
- Napa Cabbage
- Spinach
- Lettuce
- Strawberries *May only be available for some sites this week*
Right now, we’re hoping to get everything to everyone, but if we aren’t able to get something to your site this week, don’t worry! We’re keeping excellent notes. If we don’t get you this time, we’ll be sure to get you next time!

Strawberry Update
We do plan to have flats of strawberries available again this season. The strawberries are a bit late coming on, so we’re not quite ready with the flats yet. Thank you for your patience and we will keep you posted! Continue to watch for updates here on our weekly blog and in your weekly emails.

Handy Tips:
- Beets: To keep roots and greens fresh, remove the beet greens, wash and store in a refrigerated plastic bag. Store the unwashed roots in an unsealed plastic bag in your vegetable drawer. Beet roots will last up to two weeks; the greens will need to be used within a few days after harvesting. Beet greens are a delicious and healthy vegetable on their own. You can steam or saute them like spinach or use raw in salads. They are also great lightly stir-fried. Beets do not need to be peeled; just scrub them clean before using (there are many trace minerals just below the skin). Skins can be slipped off after cooking. Beets are delicious raw or cooked. Try them grated raw on sandwiches and salads. They can be steamed, roasted, or cooked in soup or stew.
- Snap Peas: Snap peas are best stored in a plastic bag in your fridge. You can eat them as they are, in a stir fry, or salad, or try a fun new recipe!
- Kale: Wash kale leaves well by dipping them in a sink of cool water several times to flush out soil and garden stowaways. Remove the stems from the leaves by folding leaf in half lengthwise, and stripping or slicing away the thick stems. Baby or tender young leaves may be cooked, stem and all. Steam mature kale leave approximately 4-5 minutes, depending on age, size, and amount in steamer. When it’s limp but still retains texture, it’s ready. Wrap kale in a damp towel or in a plastic bag to refrigerate, preferably in a hydrator drawer, for up to one week. For long-term storage, kale can be frozen. Wash, de-stem, and blanch leaves for two minutes. Rinse in cold water, drain, and pack into airtight containers, and freeze.
- Spinach: Rinse spinach leaves in cool water and pat them dry with a towel or “spin dry” as you would lettuce. Store in a damp towel or plastic bag for up to a week. Spinach can be steamed, sauteed, eaten raw, or added to soups at the last minute. For long-term storage, you can freeze spinach, then blanch it for 1 to 2 minutes. Spinach cooks quickly, so be careful not to overcook. Look for a bright green color. Two to three pounds of fresh spinach will reduce to two cups when cooked.
- Napa Cabbage: Napa Cabbage is cleverly packaged. Just stick dry, unwashed cabbage in the fridge. The outer leaves may eventually get floppy, but you can remove and discard them to reveal fresh, inner leaves. Cabbage can keep for a month, but once it’s cut, it needs to be stored in a plastic bag. Rinse the cabbage under cold running water just before use. Peel away outer leaves (if necessary) and cut cabbage in half through the stem end. Lay flat and quarter it, again through the stem end. Balance each section upright and slice away the triangular core exposed at the base. Then, chop, sliver, or grate the quarters. Use raw cabbage to make coleslaw or sauerkraut. Stir-fry or braise until slightly browned. Use steamed or boiled cabbage leaves to wrap rice or meat fillings.
- Strawberries: Rinse strawberries just before eating to clean off any grit that may still be on the berries from the field. To freeze them, spread them out on a cookie sheet and place them in the freezer. Once frozen, store them in a Ziploc bag or plastic container until ready to use.

What we’re making this week:
- Beets- This Roasted Beet Sandwich with goat Goat cheese looks amazing!
- Napa Cabbage & Snap Peas- This Napa Cabbage Asian Slaw combines so many delicious flavors and is a nice option if you want to incorporate multiple veggies from your CSA box into one recipe. Try it and let me know what you think!
- Peas– If you’re like me, you may not have enough self control to resist eating your snap peas immediately after picking up your CSA box. However, if the peas DO make it to your kitchen, try tossing whole or halved snap peas into risottos or pasta primavera during the final few minutes of cooking. This allows the peas to stay bright green and crisp, adding a pop of texture, color & flavor to the meal.
- Kale– These Curried Kale Cakes are a creative, new way to prepare & enjoy kale. The seasonings and flavors in this recipe are wonderful!
- Spinach– This Spinach Lasagna recipe with white sauce is a delicious way to highlight spinach as part of your main course. Make this lasagna ahead of time and enjoy leftovers throughout the week!
- Lettuce– This Lettuce-Wrapped Fish with Citrus Butter sounds so good! It’s on my list to try this week.
- Strawberries- With the warm summer temps we’ve had lately, it’s a perfect time to pull out your ice cream maker (if you haven’t already). This Strawberry Ice Cream is an easy, delicious treat. For another great summertime snack or breakfast, try Greek yogurt topped with fresh sliced strawberries, a drizzle of local honey and a dash of cinnamon or nutmeg. I hope you enjoy!
We look forward to hearing creative, new ways you’re enjoying your Winter Green produce. Send us an email with some of your favorite recipes and suggestions!

Please let us know if you need to cancel your share.
We understand that things happen and you may need to opt out of your share this season. We get it!
In order to cancel a share and refund any qualifying payments, we will need that cancelation in writing. Non-payment or not picking up your shares without letting us know you’re opting out does NOT count as canceling and you will still be financially responsible for whatever shares have already been delivered.
In that same vein, if you signed up to pay by SNAP and have not confirmed your SNAP info or arranged another payment arrangement by June 1st, we will have to pause your share until we have payment information. If this pertains to you, you will have received multiple emails by now requesting that information. Please let me know as soon as possible so we can keep you signed up this season!
Please let me know if you will not be with us for this season so we can adjust your account accordingly. We appreciate you!
